王渔洋《香祖杂记》卷六云，“越中笋脯俗名素火腿，食之有肉味，甚腴，京师极难致。”案越俗以炒花生与豆腐干同食，名素火腿，传说金圣叹临刑遗书说此事，云此法若传，死无恨矣。所谓笋脯只简单的称笋干，不闻有何别名，或是京师人所锡与之佳名欤，亦未可知。
